Most Artisans feel a calling to this time intensive profession. My origin story isn’t quite that deep, but is inspired by my mission to share food, pair it with knowledge, and inspire roots that nourish a healthy mind and healthy body.
While spending time living on the most remote, yet publicly accessible Hawaiian island during the 2020 Covid pandemic, the reoccurring 14-day quarantines left me daydreaming about when island hopping was so easy that I was able to explore almost every existing Banana Bread spot to ultimately determine which was the best tasting Banana Bread in Hawaii. Lack of inter-island accessibility drove me down the path to attempt to make my own version of Banana Bread since travel became very restricted in the early pandemic days. I stumbled across a recipe from Julia’s Best Banana Bread (Wailuku, HI) and used this as my foundation before making my health inspired tweaks that helped me to arrive at my very own Original Hawaiian Banana Bread recipe. This became my way of expressing Aloha to newcomers, friends, and coworkers. Before long, because people enjoyed my Banana Bread so much, I was encouraged to share it with the community – and Be Healthy Bakery was born.
Eventually my family and I left the Hawaiian islands to return to Texas. A few months into settling down in San Antonio, we reconnected with some friends from Austin who had been attempting to make homemade Sourdough bread with a starter they had acquired from a restaurant in San Francisco. Success felt elusive and they were having a rough time getting the results they wanted, so I was offered the opportunity to step in and have a go at it, which has turned into the Sourdough Loaves and Bagel creations that I've made available… As any good artisan will tell you, Trial-and-Error + Patience are the truest ingredients necessary to make a good loaf of Sourdough Bread (which is arguably the most healthiest version of bread for consumption). To this day, I am still applying my experiential learning to improve my creations since 2023!
